INGREDIENTS -
FOR PITA BREAD
2 Cup whole-wheat flour
1 tsp baking powder
1 tsp salt
1.5 tsp powered sugar
2 tbsp yogurt
3 tbsp olive oil
Warm water for kneading
FOR FALAFEL
1.5 cups chickpeas (soaked overnight)
1 cup finely Coriander leaves
1 tbsp cumin powder
2 tbsp Roasted sesame seeds
Roasted cashews and almond
2-3 tbsp gram flour (besan)
Salt to taste
Lemon juice
Green chilli- 1
1 cup finely chopped onion
3-4 cloves of garlic
Pinch of baking soda
FOR HUMMUS
1 cup boiled chickpeas
Chickpea water (water left after boiling chickpeas)
4 cloves garlic
Salt to taste
1 tbsp Cumin powder
1/2 tbsp roasted sesame seeds
RECIPE
STEP 1 -
For pita bread, take all the ingredients of pita bread mentioned above and knead it using warm water, cover it with damp cloth and keep it aside to rise for 1 hour.
STEP 2 -
For falafel, take all ingredients of falafel in a mixer and grind it into a coarse paste, so that it can easily be bind .
STEP 3 -
Now, take a non-stick tawa and grease it with very less oil and place falafels and then cook on low flame from both sides until golden brown.
STEP 4 -
For hummus, take all ingredients of hummus in a mixer and grind it into a smooth paste. Use chickpea water to grind it finely and your hummus is ready.
STEP 5 -
Now, take small portions of dough and roll it into thin sheet . Now, take a non-stick tawa and cook pita bread from both sides.
Don't overcook; they should be puffed and looking a little "dry" but not really browned.
You can also bake it into preheated oven for 8-10 minutes.
STEP 6 -
Serve warm pita bread , falafel and hummus along with fresh salad and coriander dip.
